A rural county with a garrison in the middle of it

Wiltshire has no single dominant city. Swindon sits at the north end with its distribution centres and factory canteens, Salisbury at the south, and between them the county is market towns and villages: Chippenham, Trowbridge, Devizes, Marlborough, Warminster, Melksham, Bradford on Avon. That spread changes how the work runs. Sites are twenty or thirty miles apart, so we survey properly on the first visit and price off it rather than making three trips to the same kitchen.

Sitting in the middle is Salisbury Plain and the garrison towns around it, Tidworth, Bulford, Larkhill and Warminster. Alongside that the county carries a heavy visitor trade, with Longleat, Stonehenge and Salisbury Cathedral all drawing volume catering within a few miles of each other. Both mean kitchens that feed large numbers to a fixed timetable and cannot simply close for a fortnight.
