Two cities, two universities and a lot of kitchens that never close
Hampshire runs two very different kinds of catering side by side. In Southampton and Portsmouth the work is volume: port and cruise terminal catering, student halls, hospital and contract kitchens that feed hundreds of covers a service and cannot be taken offline for a week. Inland it is the opposite. Winchester, Romsey, Alresford and the New Forest villages are small independent kitchens, often in listed or pre-war buildings, where the constraint is not scale but space and what you are allowed to touch.
Hygienic cladding suits both for the same reason. It is an overlay onto sound existing substrate, so it goes in without wet trades, without stripping back to brick, and section by section around a working service. In a 600-cover kitchen that means we phase by area. In a twenty-cover pub kitchen it means we are in and out between lunch and dinner.
Hampshire is a two-tier county, so food hygiene inspections come from your district or city council rather than from Hampshire County Council. Southampton, Portsmouth, Winchester, Basingstoke and Deane, Test Valley, Eastleigh and the rest each run their own environmental health team under the Food Hygiene Rating Scheme.

Recent work in Winchester
This wash-up room sits off the main kitchen of a commercial catering site in Winchester. The walls are lined floor to ceiling in white hygienic PVC sheet, carried behind the pass-through dishwasher and along the full sink run where steam and splash are heaviest. The floor is vinyl, coved up the wall so there is no skirting joint for water to sit in.
Wash-up areas fail inspections more often than the cooking line does. Steam, standing water and detergent get behind tiles and lift paint inside a season.
Walls, ceilings, floors and welded joints.
One contractor for the surfaces and sealed junctions that make the room easy to clean and ready for inspection.
